Se trata de unas rosquillas de almendra que elaboran las Dominicas Dueñas, las monjas del Convento de Sta María la Real de las Dueñas (o Convento de Cabañales), y muy típicas de mi tierra, Zamora.No se me ocurre una manera mejor de inaugurar este blog que con una receta dulce, y mejor todavía si se trata de una de esas recetas de las «de toda la vida».
Aún recuerdo cuando, siendo una niña, iba con mi abuela a comprarlas a un ultramarinos, ya desaparecido, del centro de la ciudad, especialmente cuando se acercaban fechas señaladas, como Navidad o Semana Santa, para obsequiar a los familiares que viven fuera y durante esos días regresan a casa.
Como veis son unos dulces que me traen muchos recuerdos, pero es que además son deliciosas!! Crujientes por fuera, tiernas por dentro y con un suave toque a limón.
Así que os podéis imaginar mi alegría cuando, trasteando por la red, encontré en el blog de Txantxu la receta de estas rosquillas, ya que no es fácil dar con ella.
¿El resultado? Prácticamente iguales a las originales.
Solo una advertencia: Mucho cuidado, porque una vez que probéis la primera, no podréis parar 😉
ROSQUILLAS DE ÁNGEL
Ingredientes:
250 gr. de almendra molida
Ralladura de 1/2 limón
125 ml. de agua
12 cucharadas soperas de azúcar
Para rebozar
250 gr. de harina
250 ml. de leche fría
Aceite de girasol para freír
Azúcar glass o impalpable para espolvorear
Preparación:
Mezclamos las almendras con la ralladura de limón y reservamos.
En un cazo aparte ponemos el agua y el azúcar y lo llevamos a ebullición hasta que el azúcar se haya disuelto por completo. Mantenemos al fuego durante unos minutos, hasta que el almíbar espere un poquito (con unos 5 minutos es suficiente).
Una vez que tengamos listo el almíbar lo vamos añadiendo sobre las almendras mientras amasamos para que
estas se empapen bien.
Es posible que, dependiendo del tipo de almendra, no necesitemos todo el almíbar, por lo que iremos añadiéndolo poco a poco hasta que veamos que la mezcla adquiere una textura como de plastilina, un poco más dura.
Una vez que tengamos hecha una bola con la masa, vamos cogiendo porciones y haciendo bolitas de unos 3 ó 4 cm. y le damos forma de rosquilla.
Cuando tengamos formadas las rosquillas ponemos abundante aceite en una sartén y la calentamos a fuego medio (tiene que estar caliente pero no humeante).
Mientras se calienta el aceite rebozamos las rosquillas, primero en harina, cuidando que se cubran bien por todas partes, y a continuación en leche y ,sin escurrir, las vamos friendo sin tenerlas mucho rato en la sartén, ya que se queman con facilidad.
Cuando estén doradas las vamos sacando a un papel absorbente para que pierdan el exceso de grasa.
Una vez frías las rebozamos en azúcar glass.
Y listas para devorar!!

Hola Jessi! las rosquillas no llevan margarina, solo lo que pone en los ingredientes. La única "grasa" que llevan es el aceite donde se fríen.

Aguantan perfectamente unos 15 días si las conservas en una lata metálica para que no se ablanden demasiado.
Eso sí, siempre que no las vean en casa, porque si no creo que no duran más de un par de horas.. 😂😘
