En casa no somos de celebrar San Valentín.
No me importa decirlo.
Me parece una celebración comercial, que solo busca hacernos gastar el dinero y bla, bla, bla…
¡¡Bah!! ¡Qué demonios!
¡Lo mío fue una chulería que se me fue de las manos!
Claro, tú empiezas a salir con tu chico, y te las quieres dar de guay y moderna:
-¿San Valentín? ¡Eso es una horterada!! ¡Te ponen corazoncitos hasta en la sopa! Y además qué pasa, que solo puedes demostrarle a tu pareja que la quieres cuando decide El Corte Inglés?? ¡Hay que quererse y demostrarlo todos los días del año, hombre ya!!!
(Dicho todo esto con mucho énfasis, y con la cara tan colorada por la intensidad del discurso que ríete tú de los corazones «sanvalentineros«.
Y que conste que sigo opinando lo mismo, pero, al final, acabas pensando que una cenita romántica nunca viene mal, y oye, si además tu chico lo quiere acompañar con un detallito, tampoco pasa nada, ¿no?
Pero claro, después de 14 años juntos, a ver quién es la guapa que le dice que, en el fondo, sí que le vas viendo el punto a eso de San Valentín…
Así que, a lo tonto, a lo tonto, San Valentín no lo celebramos, pero una cenita romántica el fin de semana previo a San Valentín, sí que nos marcamos!!
Y es que esa es otra…
San Valentín es el 14 de febrero, eso está claro ¿no? Y el 14 de febrero cae en…¡pues en 14! Vaya que lo mismo puede ser un sábado que un miércoles.
Y yo, lo de las cenitas relajadas en medio de la semana, pues no lo termino de ver!!
Que cuando quieres terminar de bañar a los niños después de un día de trabajo, cole, actividades extraescolares, más actividades extraescolares, deberes, compra, cenas de los niños, etc, pues igual para muchas cenas con velitas no estás.
Y si no tienes niños, a lo mejor te libras de los deberes y las extraescolares, pero eso de cenar, pensando en que a la mañana siguiente el despertador va a sonar muuuuy temprano, pues oye, como que le quita romanticismo al asunto.
Así que hoy os traigo una idea de postre, un delicioso pastel con un jugoso bizcocho de chocolate, mousse de chocolate y frutos rojos para darle un punto de frescura, que, si eres como yo, amante total del chocolate, no te puedes perder, lo hagas para San Valentín o para el próximo cumpleaños de tu suegra.
Porque nosotros no celebramos San Valentín, pero este fue el postre de nuestra cena romántica pre-sanvalentinera.
Eso sí ¡sin regalitos!
¡Pues menuda soy yo!!
P.D. Cariño, si estás leyendo esto, necesito un bolso negro grande…pero no por San Valentín, eh?
Preparación:
Comenzamos preparando el bizcocho:
Precalentamos el horno a 180º.
En primer lugar ponemos la leche en un recipiente, le añadimos el zumo de limón y lo dejamos reposar durante 10 minutos. Pasado este tiempo habrá adquirido una textura espesa, como de leche cortada o yogur. Esa es la consistencia que buscamos. Reservamos.
A continuación tamizamos en un bol el cacao, la harina, el azúcar, el bicarbonato, la levadura y la sal.
Mezclamos bien estos ingredientes y reservamos.
En el mismo bol vamos añadiendo a la mezcla anterior el huevo, ligeramente batidos, el aceite, el agua, la esencia de vainilla y la mezcla que habíamos realizado antes con la leche y el zumo de limón.
Mezclamos bien hasta que todos los ingredientes estén bien integrados, unos 3 minutos con el accesorio pala del robot de cocina o con las varillas de la batidora de mano, o hasta que veamos que no tiene grumos.
Engrasamos un molde, preferiblemente rectangular, y vertemos la mezcla en él.
Metemos al horno durante 20 minutos o hasta que al pincharlo con un palillo este salga limpio.
Sacamos del horno y dejamos enfriar sobre una rejilla.
Reservamos.
A continuación preparamos la mousse de chocolate:
Comenzamos fundiendo el chocolate.
Troceamos el chocolate en trozos más bien pequeños y lo fundimos, bien al baño María o bien en el microondas.
Una vez que esté fundido lo dejamos templar.
A continuación montamos la nata, pero sin llegar a montarla del todo, es decir que no quede muy dura para que sea más fácil mezclarla con el chocolate. Reservamos.
Separamos las yemas de las claras y reservamos las yemas.
En un recipiente limpio, sin ningún resto de grasa, ya que esto haría que las claras no montasen correctamente, ponemos las claras con una pizca de sal, y con unas varillas, preferiblemente eléctricas, comenzamos a montarlas a punto de nieve.
Cuando estén montadas, añadimos el azúcar poco a poco mientras seguimos batiendo, hasta que el azúcar esté integrado. Reservamos.
Añadimos al chocolate fundido que teníamos reservado las yemas de huevo batidas y las mezclamos hasta integrarlas. A continuación añadimos una o dos cucharadas de nata al chocolate para hacerlo más fluido y que podamos mezclarlo mejor con el resto de ingredientes.
Añadimos el resto de la nata al chocolate y mezclamos con movimientos envolventes.
Una vez que estén las dos mezclas bien integradas, añadimos el merengue con movimientos suaves y envolventes, para que la mezcla se baje lo menos posible y no pierda la textura aireada característica de la mousse.
Cuando tengamos la mousse lista la reservamos.
Para el montaje de los pasteles:
Comenzamos preparando el bizcocho, cortando la panza que hubiese podido salir al hornear y dejándolo lo más igualado posible.
Con los moldes que vayamos a usar para montar los pasteles, cortamos las 6 porciones de bizcocho y reservamos.
A continuación forramos los moldes por dentro con acetato para que el desmoldado sea lo más sencillo posible.
Colocamos el bizcocho en el fondo de cada molde y a continuación repartimos la mousse de chocolate entre los 6 moldes, nivelando en lo posible la parte superior de la mousse.
Llevamos al frigorífico para que repose y podamos desmoldarlo con facilidad durante al menos 2 ó 3 horas.
Podemos incluso llevarlo durante al menos 1/2 hora al congelador para que el desmoldado sea más limpio y los bordes de la mousse queden más lisos.
Pasado el tiempo de reposo sacamos de la nevera o congelador, desmoldamos y retiramos el acetato.
Podemos glasearlo o dejarlo tal cual.
Si decidimos glasearlo, fundimos el chocolate junto con la mantequilla y cubrimos la parte superior de los pasteles.
Coronamos con frutos rojos y unas hojitas de menta y, si decidimos no ponerle el glaseado, un poco de cacao en polvo o unas virutas de chocolate.
Notas:
La mezcla que hemos realizado para el bizcocho con la leche y el zumo de limón es un sustituto del buttermilk que lleva la receta original y que, al menos yo, no suelo encontrar. Si vosotros tenéis la posibilidad de utilizarlo, simplemente debéis sustituir la leche por la misma cantidad de buttermilk y eliminar el zumo de limón.
A la hora de fundir el chocolate, si lo vamos a hacer en el microondas, debemos tener cuidado ya que se nos puede quemar fácilmente. La mejor manera para hacerlo es la siguiente: programamos el microondas 1 minuto a la temperatura más baja que nos permita, pasado este tiempo sacamos el chocolate, removemos y si no estuviese completamente fundido lo ponemos de nuevo en el microondas añadiendo más tiempo, de 30 en 30 segundos y removiendo el chocolate cada vez, para que con el calor del propio chocolate se termine de fundir.
Si queremos preparar una tarta en vez de pasteles individuales, simplemente debemos doblar las cantidades de los ingredientes.
Del mismo modo, si no tenemos moldes para montar los pasteles, o no tenemos tiempo de hacerlo, podemos presentar el postre en vasitos, poniendo bizcocho en el fondo del vaso, mousse de chocolate a continuación, y terminar con unos frutos rojos y algo de chocolate espolvoreado.
Para esta receta he utilizado un molde rectangular de 25×19 cm para hornear el bizcocho y 6 moldes redondos de 7,5 cm de diametro y 5,5 cm de altura para montar los pasteles.
