Ha llegado el que, para mí es uno de los peores momentos del año…
No, no me refiero a ese momento en el que, tras un largo invierno ocultas tras medias tupidas y pantalones, toca sacar al aire las piernas, para deleite de los observadores, que se apresurarán a hacernos notar el fantástico tono pálido que lucen.
Que no digo que no sea un momento duro, para mí sin duda lo es.
Solo os digo que, hasta ahora, no me he atrevido a lucir más que un trozo de los pies, y ya se ha tenido conocimiento de al menos cuatro personas que han sufrido deslumbramientos, tras cruzarse conmigo y admirar el blanco reluciente que lucen mis lindos piececitos.
Pero hay un momento que es mucho más duro para mí llegada esta época del año.
Me refiero, como muchos habréis podido adivinar, al momento en el que tengo que dejar de utilizar el horno, so pena de morir asfixiada en el intento.
Que sí que lo uso (tengo un punto masoquista muy desarrollado) pero desde luego lo hago solamente si es imprescindible.
Así que ha llegado el momento de pasar a recetas más fresquitas, como ensaladas, sopas frías, y desde luego helados, muuuuuuchos helados, como corresponde a esta época.
Pero no quería comenzar con las recetas veraniegas sin antes traeros la receta de este bizcocho, que puede parecer un simple bizcocho, con ingredientes sencillos y al alcance de cualquiera, pero que os prometo que, una vez que lo probéis por primera vez, va a pasar a convertirse en uno de vuestros favoritos gracias a dos de sus ingredientes.
Almendra y aceite de oliva. Ni más, ni menos!!
Y es que la almendra molida lo hace tremendamente jugoso, y el aceite de oliva le aporta un sabor totalmente delicioso.
Y eso que yo antes no era muy amiga de los bizcochos preparados con aceite de oliva, porque me parecía que les daba un sabor muy intenso…
Aaaaaay, alma cándida ¡no sabía yo lo que me estaba perdiendo!!
De verdad que es fantástico, especialmente si utilizamos un buen aceite de oliva virgen extra.
Mejor dicho, diría yo que es obligatorio utilizar un buen aceite de oliva virgen extra, el mejor que cada uno pueda permitirse.
Y si bien es cierto que hay muchas recetas en las que el aceite de oliva puede resultar un poco intenso, en esta receta en particular es lo que le da el punto que lo convierte en un bizcocho irresistible.

¿Nos vamos a por la receta de este bizcocho de almendra y aceite de oliva??
Preparación:
Precalentamos el horno a 180º
Comenzamos tamizando la harina junto con la levadura. Reservamos.
A continuación ponemos en un bol los huevos junto con el azúcar, la miel y la ralladura de limón y batimos con las varillas eléctricas (o robot amasador) a máxima potencia hasta que la mezcla doble volumen y adquiera un tono pálido.
En ese momento seleccionamos una velocidad lenta en las varillas eléctricas y añadimos la leche a la mezcla de huevos y azúcar.
Sin dejar de batir añadimos el aceite a la mezcla anterior y batimos un par de minutos más.
A continuación, y ya sin las varillas eléctricas, vamos incorporando poco a poco la harina ayudándonos de una espátula para integrar bien la mezcla.
Añadimos la almendra molida e integramos con cuidado para que la mezcla no se baje.
Cuando tengamos lista la masa la vertemos en un molde previamente engrasado o forrado con papel de hornear y la llevamos al horno.
Horneamos durante 35 minutos aproximadamente a 180º o hasta que al pinchar con un palillo o brocheta, esta salga limpia.
Cuando el bizcocho esté listo sacamos del horno y dejamos enfriar sobre una rejilla.
Notas:
Es importante no abrir el horno durante los primeros 20 minutos, ya que si no cortamos la cocción y se nos desinfla el bizcocho.
Podéis añadir, si os gusta, almendra laminada sobre la masa del bizcocho antes de hornear, le da un toque estupendo.
Podéis también espolvorear el bizcocho, una vez horneado y ya frío, con azúcar glas.
