Hay sabores que te transportan a la infancia.
A los sabores que me refiero es a aquellos que te hacían disfrutar, a esos que hoy en día te hacen asomar una sonrisa a los labios cuando los pruebas y te siguen sabiendo igual de ricos que entonces.
Encabezando la lista están las croquetas de mi madre!! Que por supuesto iban acompañadas de la sensación de lengua totalmente abrasada por no esperar a que se enfriasen un poco antes de hincarles el diente…Igualito que ahora vamos!!
O el bocadillo de chorizo para merendar en el parque (siento decir que este, a riesgo de no parecer nada fit, ni healthy, ni ná, sigue siendo mi bocadillo favorito del mundo mundial)
Y es que esta eran unas de las galletas favoritas de mi abuela, por lo que siempre había un paquete de ellas en su casa, supuestamente para ella, aunque la pobre ya sabía que como nosotros lo encontrásemos primero, lo más probable es que ella no pudiese probarlas!!
Así que cuando ví la maravillosa mermelada de naranjas sanguinas que preparó Virginia, de Sweet&Sour, no pude esperar a hacerla, y una vez que la tuve hecha, decidí que una parte se iba para preparar estas deliciosas galletas.
si las habréis probado alguna vez, pero os aseguro que están buenísimas!
Yo las he preparado con mi mermelada casera de naranja sanguina, pero podéis prepararlas con la mermelada que prefiráis, tanto casera como industrial, eso sí que sea de calidad, que estas galletas bien lo merecen.
Preparación:
En un bol ponemos los huevos y el azúcar y, ayudándonos de unas varillas, preferiblemente eléctricas, batimos hasta que duplique su volumen.
Una vez que tengamos la mezcla hecha, forramos la bandeja de horno con papel de hornear y vamos depositando la masa en la bandeja, bien con una cuchara, o bien ayudándonos de una manga pastelera con una boquilla lisa, formando pequeños círculos de masa de unos 4 cm de diámetro aproximadamente, y procurando que las porciones queden bien separadas entre si, para que no se peguen unas galletas con otras.
Llevamos a la nevera unos minutos, ya que la mermelada endurecerá y esto hará que sea más fácil bañarlas en chocolate.
Troceamos el chocolate en trozos más bien pequeños y lo fundimos, bien al baño María o bien en el microondas.
La mejor manera para hacerlo es la siguiente:
Una vez que tengamos fundido el chocolate, sacamos las galletas de la nevera y las bañamos en el chocolate por el lado de la mermelada. Podemos hacerlo ayudándonos de una cuchara, o bien sumergiendo las galletas en chocolate directamente, lo que nos sea más cómodo.
