Porque todavía no tengo terminada la carta a sus Majestades de Oriente (a los Reyes Magos, vamos, que el Jeque de Dubai de momento no quiere colaborar con la causa).
¿Cómo? ¿Qué vosotros ni siquiera la habéis empezado??
¡¡Insensatos!! ¡Pero si ya estamos acabando Noviembre!!
¡Ahora es el momento!!
¿No os habéis percatado de las señales?:
Ya han dado catálogos de, al menos, dos jugueterías diferentes a la puerta del colegio.
Los supermercados tienen las estanterías repletas de dulces navideños, y el besugo y el cordero están cogiendo un precio….elegante.
Y tercera: ya hemos visto más de media docena de veces el anuncio de la lotería, con lagrimita y moquillo incluido, y lo que es más importante, como todo anuncio que se precie, tiene cienes y cienes de parodias.
Pues está claro criaturas…
¡¡La Navidad ya llegó!!
Y, como no espabiléis con vuestra carta, a los Reyes Magos sólo les va a quedar en los sacos carbón y pijamas (ahora entiendes por qué te trajeron tantos pijamas de pequeño, eh? Por tardón!!!)
Así que vosotros veréis.
Claro, que a lo mejor vosotros sí que tenéis mano con el Jeque…
Y como en este blog somos chicos muy previsores, ejem, pues vamos a empezar una serie de recetas para daros ideas de cara a las comilonas de Navidad.
Y hoy traemos la primera de ellas, con la que además participo en el concurso que organizan Claudia&Julia y Top Chef La Revista.
A ver si tenemos suerte!!
Se trata del bacalao «a la teja», una de las mil maneras que tienen nuestros vecinos portugueses de preparar el bacalao, y que recibe este nombre porque lo tradicional es cocinarlo en una teja.
Sí, las de los tejados. Pero oye, que en una bandeja de horno también queda de rechupete, así que la falta de teja no me vale como excusa para no preparar esta delicia, eh?
Que internacional me he puesto eh? Es lo que tiene vivir tan cerquita de la frontera, que algo se tiene que acabar pegando…Pues sin más, vamos a por la receta.
Preparación:
Ponemos a calentar abundante aceite en una sartén a fuego medio.
Cortamos las patatas en láminas de aproximadamente 1 cm de ancho y la cebolla en juliana, salamos y cuando el aceite esté caliente, pero no humeante, las añadimos a la sartén.
Las freímos a fuego medio unos 15 minutos, hasta que estén tiernas y ligeramente doradas.
Mientras vamos preparando el alioli.
Ponemos en el vaso de la batidora la leche a temperatura ambiente, el ajo, la sal y un chorrito de aceite. Metemos el brazo de la batidora hasta el fondo del vaso y sin mover la batidora comenzamos a batir mientras vamos añadiendo poco a poco el resto del aceite.
Una vez que empiece a emulsionar (espesar) el alioli, ya podemos mover la batidora de arriba a abajo.
Cuando lo tengamos listo reservamos.
Una vez que estén hechas las patatas las sacamos de la sartén y las ponemos sobre un escurridor para que suelten el exceso de aceite. Reservamos.
Precalentamos el horno a 250º.
Ponemos a calentar una sartén con un hilo de aceite y cuando esté bien caliente marcamos el bacalao, solo dorarlo por ambos lados sin que llegue a cocinarse por dentro, para sellarlo y que quede más jugoso.
Una vez que tengamos listo el bacalao comenzamos a montar el plato.
En una bandeja apta para horno (si tenemos una teja, mejor que mejor, más auténtico) ponemos en primer lugar la salsa de tomate. A continuación colocamos las patatas y sobre éstas los lomos de bacalao, con la piel hacia abajo, que cubriremos con el queso en láminas y el alioli.
Espolvoreamos con el pan rallado y llevamos al horno precalentado hasta que se dore (unos 10 ó 15 minutos aproximadamente).
Bom apetite!
Notas:
Ya vimos como desalar el bacalao aquí.
El queso puede ser semicurado, de tetilla, etc, pero que sea de sabor suave.
Con éstas cantidades el alioli queda muy suave pero si no os gusta el ajo, podéis sustituir el alioli por mayonesa ( sí, la de bote también vale….).
La salsa de tomate mejor si es casera, pero si vamos a utilizar una comprada, mejor que sea de tipo casero y de la mejor calidad que nos podamos permitir.
Si hay algún portugués leyéndonos, que no dude en manifestarse y corregir los posibles fallos!!
