Bueno,qué ¿Ya habéis pasado la cuarentena??
¿Cómo que no sabéis de qué os hablo??
Pues está bien claro:
Cuarentena: Dícese del período inmediatamente posterior a las Navidades en el que la ingesta de dulces se reduce a mínimos históricos. Generalmente su duración es directamente proporcional a la cantidad de polvorones y peladillas consumida durante las citadas fiestas. Es decir a mayor consumo, mayor duración de la cuarentena.
¿A que sí sabíais lo que era?
También he de decir que todo depende del volumen de dulces que tengamos en casa. Vamos que si al acabar las Navidades hemos acabado con todos los dulces pues empezaremos enseguida con la cuarentena.
Peeero, si tenemos en casa un familiar, generalmente una madre, que cree que va a haber una catástrofe nuclear, y que vamos a tener que sobrevivir a ella a base de turrón y mazapán, lo más seguro es que lleguemos a marzo sin haber dejado de comer dulces navideños, y se nos juntaran los polvorones con las torrijas de Semana Santa…
Un drama vaya.
Pero yo este año, como me he portado muuuuy bien y no he abusado de los dulces (aunque en mi casa no todos sean de la misma opinión) pues ya estoy por aquí con una receta que os va a endulzar estos días tan fríos.
Y es que estaréis de acuerdo en que no hay un plan mejor para estas tardes de invierno, que hornear unas galletitas ricas y disfrutar de ellas en familia. ¿O no?
Así que aquí os traigo estas cookies de chocolate y avellanas, y puedo decir de ellas, sin temor a equivocarme, que son las mejores del mundo!!!
Vale, vais a pensar que soy una exagerada, que también, pero es que he preparado cientos de cookies, con distintas recetas, y no terminaba de dar con las que yo quería…
¿Que cómo las quería?
¿Que cómo las quería?Pues aun a riesgo de que me toméis por tonta…lo más parecidas posibles a las comerciales!! A ver si me explico, quería una textura que se pareciese lo más posible a las comerciales, pero sin todas las cochinadas que éstas suelen llevar.
Y entonces dí con esta receta de Linda Lomelino, lo cual para mí ya era garantía de éxito, ya que además de hacer unas fotos absolutamente maravillosas, todas sus recetas son fantásticas!!
Eso sí, yo he añadido unas avellanas, que me chiflan, y me parece que le dan un punto delicioso a las galletas.
¿Queréis ver la receta?
Pues vamos allá!!
Preparación:
Comenzamos derritiendo la mantequilla, podemos hacerlo en el microondas, y dejamos que se enfríe, es decir que siga estando líquida pero no caliente. Reservamos.
A continuación troceamos el chocolate, sin hacer los trozos demasiado pequeños.
En un bol tamizamos la harina y la mezclamos con la sal y el bicarbonato.
En otro bol vamos a mezclar la mantequilla derretida, el azúcar (los dos tipos) y la vainilla y mezclamos.
A continuación añadimos el huevo y la yema y batimos hasta que todo quede perfectamente integrado.
Una vez que todo esté bien mezclado, añadimos la mezcla de harina, el chocolate y las avellanas y mezclamos hasta obtener una masa, que envolveremos en papel film y llevaremos al frigorífico un mínimo de 2 horas (aunque si puede ser toda la noche mucho mejor).
Transcurrido el tiempo de reposo sacamos la masa del frigo.
Precalentamos el horno a 180º.
Con la masa de las galletas formaremos bolitas, de aproximadamente unos 35 gramos cada una, y las colocamos en una bandeja de horno forrada con papel de hornear.
Tenemos que tener en cuenta que las bolitas de masa se expanden al hornearse, por lo que debemos dejar separación suficiente entre ellas, si no queremos acabar con una cookie gigante del tamaño de la bandeja de horno…jejejeje.
A continuación las horneamos a media altura durante 15 minutos.
Transcurrido el tiempo de horneado sacamos la bandeja del horno y, con mucho cuidado, pues todavía estarán blanditas, pasamos las galletas a una rejilla enfriadora.
Una vez frías las guardamos en una caja hermética, preferiblemente metálica.
Notas:
El tiempo de horneado es orientativo, nunca más de 15 minutos, por lo que mi consejo es que hagas una primera tanda, con 3 ó 4 galletas, para saber el tiempo exacto que necesitan las galletas en tu horno.
El punto en el que las galletas ya estarán listas es cuando comiencen a resquebrajarse un poco.
No obstante, cuando las saques del horno verás que están blanditas ¡resiste a la tentación de volver a meterlas al horno!! Cuando enfríen endurecerán y si las sacas del horno ya duritas, al enfriar estarán como piedras!!
Vale, no pudiste evitarlo y volviste a meter las galletas al horno y ahora están muuuuy duras… No te preocupes, la próxima vez, sin duda sabrás cuando debes sacarlas del horno, jejeje, pero para poder aprovechar las galletas que ya has horneado, prueba a meterlas en una lata con un trozo de pan y verás que se ablandan bastante.

Jejejeje muchas gracias bonita!! Pues tienen un puntito tierno en el centro…pero no son de las que tienen un centro blandito. Eso sí, si te gustan más crujientes solo tienes que darle 1 ó 2 minutos más de horno, quedarán más crujientes sin estar duras 😊😘
